Cakes and Rolls

I’m just gonna jump in here as nothing really interesting has happened since we last met.

Easter was great.

Made my first cake with the gfjules flour stash. I was aiming for a turquoise velvet cake but got green grass velvet instead. I was pretty sad at first but the taste and texture was without question the best gluten – free cake I’ve ever had.  I just used my regular red velvet cake recipe subbing gfjules for the flour and turquoise dye for the red.  Thanks, gfjules.  🙂

I’m always calling out the bad cops but today I’ve got a good one.  Earlier this week I had to go file some business papers in a location I’d never been.  It was in an older part of town where the streets were one way.  I had no idea how to get out and I saw a cop parked in an old abandoned parking lot so I pulled in and asked him how to get out.  He told me and then was like I’ll lead you out unless I get a call.  So he lead me all the way out. Thank you for that, good cop.  🙂

So I know I’m always all rah – rah Texas / Tejas but this story and other stories like it about women being forced to give birth to dead babies make me so ashamed to tell people I’m from Texas.  All I imagine that poor woman heard was ‘hey y’all just go on home and start picking out caskets.  Come on back when you’ve finally got death inside you.’  Vomit.  I wish there was a way for these women to legally go after every single law – maker who voted for these laws for emotional distress or whatever else they could come up with.

A stick of butter, 1 tsp worcestershire sauce, garlic powder, onion powder, salt, pepper.

These went so fast I didn’t get a clean straight out of oven pic.

So this is no doubt another thing I’m a little late to the party with but have y’all seen / made those Kings Hawaiian ham rolls?  Ovs I can’t have the real rolls so I made up a gluten – free batch.

I used Chefs Step technique of rising the dough then completely covering the pan with foil and baking.  Then storing the cooked rolls for a day or two before using.

Then you make your ham / cheese sliders and brush on the sauce and bake for about 15 minutes.

I can’t even put into words how good these were.

The rolls in the first pics above where rolled by hand.  These in this picture I just rolled out the whole batch of dough to an inch thick and then cut out ‘rolls’ with round cookie cutters.  Visually they looked so much better this way.

Either way though the inside was phenomenal.  Can y’all believe that’s gluten – free?

Did y’all have a good spring break?

Did some baking this week.  It’s never a good sign when you get all your dry ingredients measured out and then something falls off a shelf and into said dry ingredients bowl sending flour all over the place. That recipe turned out awful.

Got my new Hill merch. I feel the need to clarify that I’m not channeling Meme and planning to wear it with that stripedey skirt under it 😉 I just forgot to crop it out. Anyway the first time I washed it the color on that one spot of the logo washed completely off.  I didn’t think they’d do anything since I’d already washed it but I sent them the pic and they’re sending me another one.

Got another load of gfjules flour. 🙂

This week’s human garbage? Joe Osborn. Watched this docu about The Carpenters.  I have some younger readers so The Carpenters were a big deal brother / sister duo in the 70’s and early 80’s…before the sister, Karen died of anorexia.  This docu was filmed in 1997 and is horrible picture quality but is the story of their career.  This Joe @ss__ was talking about the first time he heard Karen sing in the studio after she’d played the trumped and he said “forget the trumpet this chubby girl can sing”.  OK so it’s the late 60’s and he’s an @ss__ that’s one thing but again this was filmed in the late 90’s and 14 years after the women he’s talking about STARVED herself to DEATH to look thin.  Seriously you’re such garbage you can’t even fake acting like a decent human being for the docu?

Now about that baking…

2 cups gfjules flour, 3 tsp baking powder, 1/2 tsp salt, 2 tbsp sugar, 4 tbsp chunked up cold butter.

1 cup buttermilk.

Mixed up. Should look messy.

Pressed together in Saran and into the icebox overnight.

Rolled and folded 4 times til the butter is all incorporated and the dough is silky smooth. No cool rest between rolls and folds.  I only did the finger press thing to show how soft the dough is.

Back into the icebox for several hours.

Then I rolled it out and made the flakiest layered biscuits.  It was a dream to work with.  I used one for a little cheeseburger slider.  Everyone else ate theirs breakfast style.  Then…

I took the rest of them and made panko style bread crumbs…they’re in the bag on the left.  The bag on the right is regular crumbs made from old bread.

I needed some bread crumbs for a recipe I’ll post next week and I had the idea of making layer style biscuits so I could separate the layers, dry them, then get a thicker crumb when pulsed.  I remembered one of my Meme’s biscuit recipes and tried it out gluten – free.  Loved it.  I also made a batch for the freezer where I didn’t do all the rolling.  I just grated the butter into the flour, mixed it all up then rolled out a little piece of dough for a tester to see how it would taste. It was delish too…but of course had no layers…and a lot less work.  I’ll try to remember to post pics whenever I bake the freezer dough.

Pizza Time

Sorry for the longer than norm absence.  I just haven’t felt like blogging.  Lupus fatigue and other stuff.

First though, Happy Birthday, Mama B.  I love you so much. 🙂

I say this all the time but in the grand parental lottery we hit the supper dupper jackpot with ours. 🙂  Mama B, you.are.everything and I know I can speak for Sister B and even Papa B when I say none of us would be half the people we are without your constant unconditional love, compassion and support.  I love you. 🙂

Made up the dough and balls the night before. One thing I’ve noticed when using gjJules flour with cookies…they turn out and hold together so much better if you chill the dough over night.

She wanted her usual batch of B-Day chocolate chip cookies instead of a cake so I made our fam fav Neiman’s cookies using gfJules flour.  As you can see it worked perfectly in yet another recipe.  🙂

Now…about that pizza. 🙂

Overnight icebox rise.  That looks weird.  I had tucked the dough all up in a ball and that’s how it opened up as it rose.

6 inch pans.  The little specs you see are spices in the dough.

Bottom didn’t get quite crisp enough for me so I did the skillet crisping trick for about 2 minutes. Perfecti.

So remember when I ordered all those gfJules mixes after Christmas? Well this was one of them.  Now before I say anything else let me say that I’m sure the recipe on the box works great but I’m far too much of a pizza snob to ever put egg whites in my pizza dough.  Again this is my preference.  You do you and don’t worry about me. 😉

Most of my new readers lately end up here by searching for Jules flour so I’m sharing this to show that it even works doing something different with it.  If you read the old blog you know my fav homemade pizza dough is the mock Pizza Hut pan pizza dough.  I know.  I just said I’m a pizza snob and I love Pizza Hut dough.  That’s right.  Shoot me.  On second thought all these pieces of human garbage running around shooting people…no don’t do that.  😉

If you’re not familiar with that dough recipe it’s been going around since the mid 80’s…although when I went to find a link for it here I found several fairly new blogs posting it like it was something the blogger just created themselves yesterday.  Whatever.  Plenty of us have been making it since the 80’s and know y’all are lying.

Anyway…if you’re not famil with it it’s just flour, dry milk, yeast, sugar, salt, oil, water and then PAM type spray for the edges.

I’m gonna add what I did in recipe form at the end of the post but I just used 1 pizza pack (each box has 2) for the flour, sugar and salt. Added my own milk powder (I use Peak dry whole milk powder), yeast and water.

Side note…Jules has some sort of dairy free powder included in the mix but we’re not dairy free and I mean really have we not met? I don’t do dairy free. 😉

It turned out fantastic.  Her pizza mix has spices already in it (like garlic and oregano) and it smelled so strong when I mixed it up.  I was honestly a little worried about it…but it’s perfectly seasoned.  Even Mama B was able to eat it and she’s super sensitive to overly seasoned stuff.

If you’re looking at the Jules mixes and have to pick one or 2 to try I say go with the pizza and pancake mixes.  You won’t be sorry.  🙂

Pan Pizza Dough Using gfJules Pizza Dough Mix

1 pack of gfJules Pizza Dough Mix

2 tbsp dry Milk Powder

1 tsp dry Yeast

1 tbsp Oil

1/2 cup warm Water

3 tbsp Oil (for pans split between each pan)

PAM type spray for edges

Directions

This made 2 six inch pan pizzas.

I mixed everything up with my hand mixer with dough hooks for 5 minutes.

Let rise on the counter til it almost doubled then into the icebox overnight.

Dived dough and shaped.

Transferred shaped pizza dough to pans.

Sprayed all around the dough edges with Crisco butter spray.

Didn’t do a rise at all.

Baked at 375* in the convection oven without toppings for 10 minutes then with toppings about 15 additional minutes.

Bottom wasn’t as crispy as I like (because I used regular pans instead of cast iron) so I heated a skillet to med-high and heated the pizza for about 2 minutes.

Road Trippin’

Can y’all believe the bluebonnets are already blooming?

Went to my beloved Gruene, TX.  It’s this little tiny Texas town on the Guadalupe River with one of the oldest dance halls in TX.  Oh Gruene hall, we had some nights back in the day. 😉  It’s where George Strait started and where the back cover pic of his first album was shot.

Ate at the Grist.  Because of some health stuff that I’ve been talking around here on the blog I couldn’t get my usual sausage plate so I settled on some tortilla soup and queso (didn’t get a pic).  Plus a shared sundae.

Besides the dance hall and restaurants there are a few little craft / antique type shops plus some wine shops.  Couldn’t resist the Aggie wind chime and immediately found it a home in the back yard. 😉

Also seen…do y’all see that sign, my five fav dallas-ites?  Life is too short.  Y’all come join us down here in the land of the living. 😉

Gluten – free Pizzookie time. 🙂   I used my fav brown butter chocolate chip cookie recipe from the old blog.  Using gfJules flour instead of the other flour.  I made up half the recipe and then used 12 oz of that for the pizzookie…baked in a 6 inch cast iron at 375* for 13 minutes. It was so good and everyone keeps asking to have it again.  Soon, y’all.  Soon. 🙂

Made some cute little gluten – free grilled cheese ‘sliders’ with the do it all dough I’ve been working on.

Ice Cream Bread

Started watching 11.22.63.  If you’re not familiar it’s a new hulu original produced by Stephen King and JJ Abrams where crazy James Franco’s character travels back in time via a diner pantry to the early 60’s in order to try to stop Oswald from allegedly 😉 killing Kennedy.  Just the kinda crazy you’d expect from James Franco. 😉  The premier ep was pretty good.  Not digging the rollout though, hulu. If this is gonna be weekly eps instead of releasing them all at once like Amazon and Netflix do then we’re  just gonna wait til all the eps are out in few weeks. Get with it, hulu.  If we want to watch traditional style TV we’d just watch regular TV.

Over the last 2 days I’ve seen or heard some of the most hateful racist people referencing To Kill A Mockingbird / posting meme’s…ect in a positive way.  Makes me wanna scream.  Some of y’all need to reread the book because y’all ARE the horrible people from the book.

Do y’all like Annie’s Gluten – Free mac and cheese ?  I really like the deluxe one in the blue box with the squeeze packet of cheese.  The purple box?  Not so much.  Mama B likes the shells shape the best though but always wants me to make homemade cheese sauce for her.  So I end up with a bunch of left over powdered cheese packets.

What should I do with them?

 

Make cheesy bread of course. 🙂

Look at that.  No holes.  Just soft chewy stretchy buttery bread. 🙂

The dough I’ve been playing around with.  For this batch I mixed in the Annie’s cheese packet plus some parm.  I’m running out of words to express how good the gfJules flour is working for well everything but esp this dough.  Made some of it into garlic toast to go with gluten – free shrimp alfredo for Lent Friday…over rice because I didn’t feel like messing with boiling pastaAnd guess what? The whole fam loved it over rice.  That made me really happy because sometimes I just absolutely hate messing with boiling gluten – free pasta.

Ignore the writing on the Saran wrap…it was for something else.

I’m not happy with these pics but I’m sticking them in to show how versatile the dough was.  The next day I used the rest of that batch to make a cheeseburger roll.

Now to the title of this post…Ice Cream Bread.

Have y’all made this?  I’m probably way late to this one but when I saw it last week I had to give it a try.

1 1/2 cups Self Rising Flour**

2 cups melt-y Ice Cream any flavor I used vanilla

Sprinkles I used a spring mix

**I used 1 1/2 cups gfJules flour plus 1 1/2 tsp baking powder and 1/4 tsp salt per cup to make homemade self rising flour.

so for this particular recipe

1 1/2 cups flour

2 1/4 tsp Baking Powder

1/4 plus 1/8 tsp Salt

It’s kinda like banana bread consistency.

Ok I’m only posting this to show that it can be done gluten – free…but having made it and tasted it…I’m honestly not sure why anyone would want to do this.  It was interesting and looked pretty but it was also pretty blah.  Maybe if I’d used a stronger flavored ice cream and different add ins it might have been better but I really can’t imagine ever making this again to test it out.  I can’t be wasting my Blue Bell like that.  😉
