First, the week leading up to Christmas I had to take Mama B to the ER late one night. It was all kinds of drama that led to us having to leave before she could be seen because the ER Dr at our Podunk hospital wasn’t covered under her insurance. If you know me in real life and live in our town…don’t go to the local hospital unless you’re like 110% sure you’re dying. Drive to SL or V and see some decent nurses / doctors. There was this one nurse there that must be the sister of Satan (and that’s being nice). And believe me…she’s already been reported. So anyway thankfully the urgent care at her regular Dr’s office was open super early the next morning. She got seen 1st thing and her temp was 104. The Dr. said if she’d waited any longer it would have been really bad.
So she was sick and then Sister B got sick and wasn’t able to come home. We ended up meeting her for lunch on Christmas Monday but she’s still not feeling all that great. Feel better soon, SB. 🙂
We still celebrated Christmas. It just wasn’t the same as if everyone had been healthy.
Made the real kolaches and pigs for the rest of the fam.
Used the roll dough I wrote about in this post to make me some celiac / paleo safe pigs and prune kolaches. These actually turned out really well. And they held up in the icebox too. I’m so impressed with this recipe.
So are y’all starting to practice y’all’s Russian. 😉
About that cherry rum cake.
I made my regular rum cake recipe using gf Jules of course (you can use any rum cake recipe) and for all of the water (just the water) in the cake and drizzling sauce I subbed cherry juice from a jar of maraschino cherries. I drained the cherries really well and pulsed them in the food processor then dried them even more on paper towels and added them to the mix. I left everything else the same. Mama B said this was the best cake I’ve ever made. 🙂
My fav Christmas presents (so far)…a Rubik’s cube and a Salt Life sign / decoration for the back fence (it needs to be dropped down a little bit). We’re starting to decorate the back fence with old vintage and cute signs. When Rubik’s cubes were first a thing I got one for Christmas and played with it for hours on end. They had all those retro toys out for Christmas this year and it was one of them. My other fav won’t come until sometime next week. I’ll share when it gets here. 🙂

So…about the title of this post. I took 4 days off plan for the holidays and while it was worth it in some ways it was horrible in others. In about 48 hours my pain level went from around a 4 to a 24. My face bloated up. I was itching like crazy. It was awful. I had planned to stay off plan thru Monday (because we were meeting SB for lunch that day and it was a road trip) but I went right back on plan after Christmas day lunch. It took a good full 3 days for my pain level to get back to somewhat manageable.
Lesson learned. I just cannot jump on and off from no sugar / grains (even with celiac safe ones). I have to find ways to make this livable. And that’s what I’m going to do. I’m going to figure out ways to make things I like so maybe I won’t miss them as much. I did it when I had to go gluten – free. I’ll do it with this too. And of course I’ll share along the way. 🙂
Had to go out for lunch on Tuesday. Saltgrass. Caesar and Prime Rib. Forgot to take a pic of the steak but I cleaned the plate so you know it was delish. This was a perfect back on plan meal. 🙂

One of my fav gifts. 🙂 Have y’all seen these coloring books for adults? Supposedly it’s supposed to help you zen out. Surprisingly it does kinda work. I didn’t realize it was that big of a deal until I wanted some different coloring pencils and Hobby Lobby told me they’d been sold out for a couple weeks. Even Amazon is backordered til late January (for the wax pencils).

So…I have this new mug and need something to put in it. 😉 What’s a girl to do? Make some homemade hot chocolate mix of course.
1 1/2 cups dry milk
1 1/2 cups powdered sugar
3/4 cup cocoa powder
1 cup white choc chips
1 large box chocolate pudding mix
Have y’all seen that recipe? You food processor dry milk, cocoa powder, powdered sugar, white chocolate chips and this wasn’t in the recipe but I added a large box of chocolate pudding mix til all powder-y and almost smooth. The chocolate chips don’t completely break down but they melt quickly when you make up the hot chocolate. Then when you want to make a cup of hot chocolate you mix 1/3 cup of the mix with 1 cup boiling water. This is definitely a keeper. The reason I added the pudding mix is because normally when I make hot chocolate I use more than a little heavy cream to make it thicker. I can’t have anything really heavy or rich right now but still wanted a thick hot chocolate.
The latest in my ongoing testing of gfJules gluten – free flour. Look at those bubbles. 🙂 I’m really loving this flour.

Ya know…the last time I checked you can’t just walk into a police station…tell them you want to be a cop and have them respond by handing you a gun and a badge. Y’all are supposed to be highly trained individuals. If the only way you’re able to take down a TWELVE year old child is to shoot him…well you just completely suck at your job and need to take a seat while someone more qualified gives it a try.
Newsflash media covering political candidates…unless you were in the room when something happened nothing you say is fact. I don’t care how good you think your sources are…it’s still nothing more than the information those who WERE actually in the room or wherever want you to share. Stop it. Stop acting like what you say is the be all end all. And those of you giving too much informational power to one person or group of people? Y’all need to stop that too. 😉
Am I the only person in the world who thinks Star Wars is the dumbest thing ever? Ok maybe not ever but y’all know what I mean. I don’t get it at all.
Have y’all watched this documentary…Soaked in Bleach? It’s about Kurt Cobain, a PI and Courtney Love. Apparently Courtney hired the PI to find Kurt after he checked himself out of rehab. The PI didn’t believe anything she said and after Kurt’s death he started investigating it as a murder instead of suicide. I’d always thought the ‘Courtney killed Kurt’ stuff was just distraught fans who couldn’t accept the suicide. This docu totally changed my opinion. I still can’t quite wrap my head around how someone as drugged up as she was at the time could have orchestrated a murder but the ‘evidence’ the PI presents in this docu is just way too much to ignore. I’m not saying I 100% think she did anything I’m just saying the docu makes me question everything I used to think about it.
Just kidding. I’m totally in the Christmas spirit. 🙂 Bottle not needed…but totally appreciated. 😉

Candied Cherry Christmas cookies. I make these every year. This year I used gfJules flour and this dough was unreal. I seriously would have been happy with just a bowl of dough. 🙂

I played around with some gluten – free dough for me but it didn’t turn out.
So I did this with it…
That’s right I said to myself, hey you don’t have nearly enough to do today why don’t you make some scratch puff pastry? 😉 LOOK at those layers. That’s allgfJules flour. No weird added ingredients just straight up flour, sugar, salt, milk, yeast and butter. I rolled a few hot dog wieners to test it out. Plus I filled a couple little squares with the left over prunes. I have some dough left over in the freezer that will hopefully soon become the crust for the chicken pot pie I’ve been craving. I’ll let y’all know how it turns out.
I really can’t say enough good things about gfJules so far. I’m liking it a lot. I don’t know what has changed with cup4cup or if it’s just something that changed with my taste but since having to go back to gluten – free for good something just tastes off with it. No matter what I’ve used it in…it’s made me gag. I was torn between trying a few different gluten – free flours and so far I’m really glad I decided to give this one a try.
Made some more peppermint cookies.
Took Mama B to pick up the Tamales. Test tamal in the car of course. 😉
Finished the night with my second fav Christmas movie…Love Actually. 🙂

With the exception of Sister B informing us that she likes One Direction 😉 ours was really nice. I was so sick but still managed to throw together a pretty good day. 🙂
We all wore fun Christmas T-shirts to get us in the mood. I threw in the requisite Uggs…just because. They were a gift to myself and this is the first week cold enough to wear them.
Yeah, I know they’re a pretty dumb buy for someone who lives in such a warm climate but I don’t care. 🙂
Plus, I’m already planning next year’s Christmas week and they’ll be plenty appropriate. Wink wink rest of the fam. 😉

It was a very nice day with family topped off with a night of Christmas light looking. When my Mema was alive…every Christmas Eve night we’d pile into the car and go driving around looking at lights. As we got older she’d either buy us wine coolers at the convenience stores (yes…as we drove around) or we’d bring our margaritas with us from home. This year I was on too much medication to drink but me and Papa B ate rum cake as we were riding around. We joked about how we used to drink our liquor…and now we eat it. 😉 (We did the light looking thang with Meme too…minus the alcohol…so it’s just really important to me that we keep up the tradition every year.)
Anyway…I finished my antibiotics and steroids today and I am finally feeling better. I have a massage scheduled for Wed and then I’m looking forward to starting a fresh new year. I spent the majority of this year sick and medicated…I’m so very ready for a symbolic fresh start.
